The Yang’s dumpling is a famous company in Shanghai with a history of more than 20 years. They sell Shanghai*s most famous snacks, such as fried buns （生煎包） and vermicelli soup （粉丝汤）.Whenever my out-of-town （外地的）friends visit Shanghai, I introduce them to The Yang’s dumpling. Almost everyone who has eaten The Yang’s dumpling falls in love with it!
The Yang’s dumpling is a kind of dumpling with thin skin and a lot of pork, and a delicious broth （肉汤） inside the meat. This is what makes it different from the fried buns in other places. Before you eat them, you can take a small bite, suck out （吸）the juice, and then eat the buns.
Although the Yang’s dumpling is very famous in Shanghai, it does not have many branches （分店、分支）. Generally speaking, enterprises will go to different places to open branches after they become famous. But the Yang’s dumpling has not. Perhaps they want to maintain the quality of their food. They only opened stores in Shanghai, and all of them were directly operated （直营）stores, not franchised （力口盟）stores. I think this is the most valuable part of it. I’ve seen a lot of snack bars that, once they’re famous, will try to open branches everywhere, and then their food becomes less tasty. The stability of food quality is the most important reason why the Yang’s dumpling is successful.

虽然小杨生煎在上海非常出名，但是它并没有开很多分店。一般来说企业出名了之后都会去各个地方开分 店。但是小杨生煎没有。可能是出于维持食物品质的原因，它只在上海附近开店，而且都是直营店，没有 加盟店。我觉得这是它最难能可贵的地方。我见过很多小吃店，一旦出名了就到处开分店，然后就变得越 来越难吃。所以，品质的稳定是小杨生煎为什么能成功最重要的原因。
